roasted cornish hen 20130324


烤全雞最難在於,雞要熟又不能讓雞胸過熟變柴。
這個食譜重點有三:
一, 把雞切開成蝴蝶型,雞能熟得更快就能減低雞煮過頭的問題;
二,加牛油和調味在雞皮和雞肉之間有助保濕和加味;
三,用盤裏的汁和油不時塗在雞上,有助上色。

下面這個video教你如何把雞切開成蝴蝶型,片中提到的那塊keel bone,可以不除去,但把它拿走雞更易煮熟。

 

 
yield: 1 cornish hen
recipe: 阿四亂亂做
 
ingredients:
3 potato/ sweet potato (can substitute whatever root vegetables you like)
1 carrot
2 onion
1 cornish hen 
2 tbsp unsalted butter at room temperature salt salt

pepper
herb (optional)
olive oil
  
instructions:
1.defrost chicken overnight. 
2.remove bird from wrapping, remove giblets. remove any excess fat and leftover pinfeathers and cut the pat pat out. 
3.butterfly the cornish hen. Simply remove the backbone by cutting down either side of the hen with kitchen shears. Spread the hens. butterfly-style and skin side up, on a work surface and flatten by pressing down on the breastbone. the hen is ready to season and marinate.4.rinse the cornish hen and pat dry top and bottom. 
5.salt and pepper the cornish hen in and out. massage the room temperature butter on the skin.  carefully separate the skin from the breast and leg and spread about 2 tablespoon of butter, salt and pepper between the skin and meat of the bird. smooth skin back down to cover meat.  

6.place the cornish hen on a cooling rack on a baking pan. cover with saran wrap and let it marinate in the refrigerator overnight.
7.remove the saran wrap and leave it in the refrigerator to dry skin out for 1 hour. 
8.preheat oven to 400F.
9.take the cornish hen out and leave it in room temperature.
10.add salt, pepper and olive oil to vegetable. mixed well.
11.place the vegetable in the bottom of the baking tray. bake the vegetables uncovered in the oven for 20 minutes.  (can add the giblets from cornish hen to add flavour. )
12.stir vegetable and place cornish hen on top. roast for approximately 40 minutes (depends on size of cornish hen) until golden and cook through (poke the leg if juice come out clear mean it's cooked). Baste occasionally with pan juice. If the skin brown too quickly before the hen finish cooking, cover with a sheet of aluminum foil.
